For the record you use a sharp knife so that you don't cut what you shouldn't, not a dull one. A knife will not dull evenly leading to some areas being sharper than others and a loss of control, as well as a dull knife needing more force that can lead to slipping. With a sharp knife you have consistency that allows you to have control over what you cut, and a minimal amount of force needed. Mind you magically enhancing your knife's cutting power is probably not that controlled considering what he has done in the past. Though a truly dull knife has some use in separating things that don't need to be cut, but not in cutting.

You would normally let it hang for 1-2 days, 3 if weather is cold enough before you butcher it to drain blood and stuff. Also having a sharp knife is super important because you have much more control over a sharp knife than a dull knife, not only are you more likely to cut something you don't want to cut with a dull knife you are also more likely to injure yourself with a dull one.
