This slow burn style works great for the premise since it showcases that she can be very subtle with her tactics, employing a very direct approach and yet always accounting for plausible deniability to slowly push Jun further and further into finally outright lusting for her. If she and Jun ever gets to do the deed, it will 100% happen just like in this chapter where Jun basically forces himself on her while she calmly gloats inside that everything went just according to keikaku and shit.

I have to wonder, though, if she will ever be forced to go full yandere and try to harm the dad/Riko/everyone else other than her dear son.

I can't imagine what it is, but if this was an actual hentai her internal conflict might have been between her desire to be a diddy like before and her desire for actual incest, as in she fully considers Jun her real son and Jun considers her his real mom as they shag lol.

There was a part in that flashback where Jun couldn't really remember what happened in Saki's apartment, and then his narration conveniently skips everything to him getting suspended. To me it implies Jun was blocking his own memories of what actually happened after he finally called her "mommy". Note that in the current timeline he never actually calls Saki mommy, but Saki(-san) instead.

Yeah, we never see or hear from him at all after he goes to Singapore... Perhaps the poster who said he possibly just wanted to abandon Jun and Saki gave him a convenient exit was right.

Saki knows what she wants, but is also self aware enough to know that what she wants is wrong. Or at the very least she recognizes what Riko feels for Jun and feels guilty about the idea of NTRing her. Likewise, she also genuinely cares about Jun enough to see the ill of robbing him of a more healthy relationship with a girl his own age instead of his stepmom. I’m sure whatever trauma she’s carrying colours all of her behaviour too, but we’ve yet to see what it was.
Maybe she fucked her stepfather whom she thought loved her and not only was he just using her, but the affair terminated her relationship with her blood relatives too.
