I'd enjoy this series more were she made more thoughtful and quicker on the uptake.

Her impulsiveness is a core character trait which, as we see here, has a useful upside. As do her core instincts for sweets. The point of this series is to show two people who are completely different but somehow complementary coming closer together; making her more like him (so quickly, anyway) would just disrupt that point.
