Yea I know Baki is not supposed to be making sense but I cannot suspense my disbelief in this arc. This is like when martial arts manga try to sell pro wrestling as a legitimate way to fight against other martial arts.

Doppo said this back in chapter 7, and it kind of makes sense. Doppo refers to sumo as a herbivore, athough a very tough one. It's not a versatile style at all as it's not made to clash with other styles, but it does what it's intended to do in the ring, and only in their ring, which makes it strong when the conditions are right
