This chapter is named after the jazz standard "Ev'ry Time We Say Goodbye".
Introduced as a jazz song in the 1944 Musical Revue, "Seven Lively Arts". Featuring lyrics and music written by Cole Porter. The first version was performed by Nan Wynn, and the song went on to become a well-known jazz standard. The original performance seems to have been lost to time, but here's a link to another version recorded the year after in 1945, with vocals by Peggy Mann:
