Posible reasons:
-Adam's a Lich and has no longer any attachment to gender. As a seeker of knowledge attempting to have a turn on all races and genders is part of her checklist of things to do
-Wants to check if his frankenstein-type of body would reanimate a kid's growth.
-The best bodyparts Adam had available when he had to build a new body had to use a little girl as main body. Any other option would have been a body that used parts deteriorated that would had to be replaced earlier than he would have liked to.

For those curious about what would happen, from the Pixiv version which this one seems to follow pretty closely:

All her limbs gets amputated and three, the legs and one arm, get replaced. Her left eye also gets removed but not replaced and the curse on the other one is lifted. As for her "girly parts", despite the damage they're left as is but she's informed she cannot have sex or have children anymore.
Way later on, when they got in contact with the elf village and Reszure's family all her limbs, eye, "girly parts" and all other scars and damages get fully regenerated but this is on the final endgame of the original series.
Also yes. The noble who did all this to Reszure got captured by the elves, led by Reszure's sister.
