Just a couple unnecessarily pedantic comments on the last page: the catholic church is a christian church, it's the western half of the original christian church of the Roman Empire. It's kind of a dog whistle to contrast the two; a lot of fundamentalists do this consciously because they want to de-christianize anybody that doesn't follow their dogma. As for "father" I think you generally used it right. "Priest" would have been fine when they were talking about him behind his back.
They are definitely dressed like catholics, but they could also be anglicans, which would be a comic twist, and maybe account for the blond hair!
Back to the "christian" thing, the kind of people that emphasize catholic/christian and call themselves "christians" don't call their priests "priests," they usually call them ministers. So yeah, father to his face, priest behind his back. Or father behind his back.
