No community eats silkworm cocoons; silkwom cocoons are silk. What are eaten, by members of various communities, are silkworm larvæ. (These taste much as I imagine the dust on a window sill would taste, though I have only smelled and not eaten the latter.)

The word used in the manga for the snack is 蛹, which directly translates to pupa (or chrysalis in the case of butterflies). While you are correct that this is not the cocoon, which is the silk that surrounds and protects the pupa, what they are eating is also not the larvae, as the pupal stage is after the larval stage.
We opted not to use the word pupa in the translation, so we ended up incorrectly using cocoons since they are present in the pupal stage. In hindsight, we probably should have just translated it as them eating silkworms and called it a day.
