Did you prefer the authentic taste or the taste that suit you?

Like the title said. Which one do you prefer?
There so many authentic food around the world that have their own kind seasoning and maybe you prefer something sweet, or spicy or more creamy than the authentic one.
In my case I'd more prefer if its suit my taste. I still try what the authentic food taste but I'll try to change it in my taste like adding sambal or salt.

Generally, if I'm going to try something new, I want it to be authentic. After that, if I didn't care for it but there's a version that's localized (and being American, this is usually the case), I'll search that out instead. But don't serve me a chimichanga or chicken tikka masala and tell me it's 'authentic' (although I do like both of those).

I don't know about must, but in many cases it's preferable. I have been working my way through the curry options at a local Indian place (that several folks I trust to know have said is reasonably legit), and I know I'm not keen on the way they prepare their goat, but most of the rest of it has been agreeable (though I won't go above about a 3 on their 5 point spice scale, because I'm a wuss that way).

If it's good enough for my tongue, i take the least expensive because that's just food. So i nearly never take the authentic ones because they are more expensive for purely marketing reasons... Authentic is mostly bullshit in most cases !

Except for French Bread, but it's only because we are way better at it and no one in the world can compete, but it's the rest of the world's fault, so deal with it !

Normally you'd ask what kind of food you're talking about since there may be dishes you simply can't eat unless twisted/tuned. There is even controversy about the actual taste/preparation of many dishes, so for different areas the "authentic" may differ, let alone when the ingredients are grown in different climates/areas. About Davidian posts, this is the mental image I got:

Not that kind of authentic brand that rip off your money but something like the true(?) seasoning. Like I just learn that carbonara don't have cream in it and I eat it with cream.

And prefer rice than bread. Every bread I eat just bland and don't have taste. Not that I ever eat french bread.

I just think about the seasoning.

I grew up in the "mountains", so I was conditioned to "I eat to live" mindset, and not the other way around

one time my boss took us to this fancy expensive sushi restaurant after finishing a project
and, well... it was delicious alright
but I couldn't really tell the difference from the much more cheaper sushi chain across the street

I'm very picky with food but still if I'm gonna try a foreign food for the first time I would want it as authentic as possible.

Like others said, after I've tried something once or a few times I might change it up a bit.
