I'm guessing the whole shtick was making him angry on purpose to get him in a good condition to "do his job"
The guy mentions that he wants the usual and is here before a job, and he seems like an okay guy before that but turns into a complete psycho when he sees the condom (which seems to parallel past trauma) and it triggers him into a "better" state to do his job well.
IMHO he's not mad at Bonbello or anything, it's some kind of fucked up deal where he had him repeat the exact same recipe that his mother did, up to the condom part (implying his mother did the same fucked up thing ?) to trigger him into a better state to get to work.
