Well, it was shown in previous chapters that she especially dislikes lies.
The real problem here is that she couldn't imagine that what she knew about magic was false (it's possible to summon humans). So she immediately assumed that he was lying. I'm still thinking that she loved MC and that she turned down his confession because she couldn't let him know about magic.
It's poor writing, but it's coherent with what we know about her up unitl now.

Saw it coming since the mimic monkey fight. Woman's voice, remotely controlled, needed plenty of time to prep the disguise and that weird disconnect with her saying reinforcements won't come despite the beyond student level enemies. If I had to guess her motives, stealing excalibur and securing the ley line for whoever she's working for and she brought in MC at first to keep an eye on him and potentially muck up the others only to realize he's a major monkey wrench in her plan.
