I purely love all these Hollow Ataraxia/Carnival Phantasm/Emiya-san Chi no Kyou no Gohan-style slice-of-life and/or wacky hijinks stories where the only people who died in the Holy Grail War were the asshole sadist priest and Caster's industrial-scale-child-murder summoner, and everybody else gets to be happy (though the male Matous could stand some more suffering).

I will admit, though, that it is a little weird to see the big tragedies and plot points (Caster's fixation on Saber, Sakura's home life, the fact that Rider fed on Ayako) played out as running gags.

I really adore these various fun, slice-of-life-type stories. While, of course, these all diverge quite a bit from the actual story, that's really the point of this series - just to have some lighthearted, fun scenarios without all of the tragedy of the main series. Who doesn't enjoy a little bit of fluff every now and then?

I gotta say, it's fun to see all of the various characters bickering and causing all sorts of chaos then seeing Saber just vibing in the background and watching it all happen.
