1.x is a bit less structured, to put it simply. It's more like slice of life stuff that was technically written between the main chapters (and are likely canon).

for 2+, there's gonna be different "arcs" for each girl and I guess they chose to make each arc a chapter (they are all non-canon, just show a lot more than the non-fanbox stuff)
