The flavor extracted from the seeds of a rare tropical orchid, that still has to be hand-pollinated when grown by humans, and to this day is the second most expensive spice by weight. To the point that 95% of vanilla in foods is just the primary chemical, synthesized from wood pulp.

And yet we make fun of "vanilla" and downplay it to mean "plain" or "boring" despite it being so precious and desired. Also, the flavoring is pretty great too.
