Efficiency in dragging the enemies into the box, also isn’t suction power more effective than dragging them in through roots, rope and the like? Probably because IRL octopuses are masters of mimicry. They can change color and blend into the environment in fascinating ways.

Also, IIRC, old Japanese RPGs depicted them that way.

Well, the original D&D mimics were pretty much amorphous creatures that took on any form they could to catch adventurers, only to reveal themselves once they took them by surprise and kill them using their pseudopods, which later evolved into teeth/tongues/tentacles.

So yeah, it's not so much tentacle but more of an amorphous creature whose appendages took on a tentacle form.
