Goshujin-sama to Yuku Isekai Survival! - Vol. 8 Ch. 47

What should get covered over the next chapter/possibly a few more, in no particular order.
The dagger was covered in basilisk poison (or was it cockatrice? one of them) and by all right a normal person would've just die on the spot. They are keeping him barely alive right now by putting him in holy ground inside the chapel.
So much of the reveal/plot direction shift happen while he's recovering.
The saintess reveals that she can tell he has a lot of divine power. She even show it by having an item that shine brighter the more divine power one has...and his radiance was even stronger than hers.
On top of this, she received an oracle before coming here that she will find her fate in this place...and at this point she's convinced the oracle refers to Kousuke.
The main plot twist going forward is that the Saintess belongs to a faction of the church that believe the current human supremacy doctrine is a recent change and the true, OG teaching is one of co-existence. However there's no solid evidence to prove that right now so her faction has been laying low and searching for something to prove their stance.
Kousuke will eventually help with that.
Anyway he'll be stuck in there for a bit before he recover enough, but eventually he'll be able to leave to go contact the slimes with mithril rosary to make that communicator.
(the plan is to setup communicator underground, and the slimes can be contact point for the saintess and the liberation army)
Then he'll get found by Melty (who shaved down her horn to pass as human), go to the slimes, get assaulted by Melty+slimes, pick up a pet/+1 future waifu on the way to liberation army.

It's just leather armour, doesn't really block piercing attacks. They are meant to block punches and maybe some slashes.
Plus, MC isn't really physically strong.

Can I say that the MC actually handled the infiltration absolutely "smooth"? No awkward stammering, no "Oh no they did something totally unexpected(It was not unexpected)", he went into the city like he was an actual mercenary that belongs there. Even once he was in he quickly went on to his goals ... well until he was violently penetrated by a hard object at least and even then it was a quick reaction when he elbowed the guy.
Leather Armor is actually quite tough if properly made and you do need quite a bit of force to pierce it (Source: Me is Old Larper and Fantasy Nerd) but that guy was crazed and probably swung with all the force he could muster.

It has been shown that he could take it off whenever he wanted because he didn't have the magic in his body to make it functional. My guess is he stored it into his inventory because it doesn't make sense with his current disguise.

AYO MELTY FINALLY GETS SOME K SAUCE?!
The collar doesn't work on him from the very beginning he was just wearing it for decoration and to tell the demihumans he is Sylphy's property as shown from the very early chapters. So he or anyone would have removed it, since he was still wearing while he was underground with the slime girls, he probably removed it to infiltrate the town otherwise it look pretty conspicuous and not match his disguise as an adventurer.
Somehow I doubt that leather armor worth the term (as [Craft]ed per magic recipe) would be quite so bad at mitigating a stab. Thick leather (as opposed to a fancy but hardly protective leather jacket) can be quite resistant.
So, if you have evidence for that claim, please provide. Because I've tried to find some but was let down by YT and Google so far.

I was just thinking at the beginning of the chapter that he is too important of an asset to be just casually walking around, but then I thought that even in a fantasy world it's not like people just get killed randomly on the street, so it should be fine. Well, it wasn't fine

Stab proof is actually kinda hard to achieve, and the way he elbowed the dude might've driven the dagger deeper in.
