Hmm, you're right, and comparing the overall body posture in this chapter with the one you linked, it does look like they are still doing the Western style.Pretty sure even in Western court you're also supposed to slightly bow, or at least enough to keep your head down until addressed.
The art in those pages cover the knee/side so it's hard to tell which way they're doing, but going back to earlier chapter shows pretty clearly their etiquette is single knee i.e. Western style:

But if you guys are saying in Europe folks got on their knee in front of a random noble they aren't even serving, then I guess you are wiser than I am. But the whole [Legal Wife] business is where I was loosing it. Still kinda lost there, I think if I understand, the vassels of the [Legal Wife] are normally by duty go to serve their Father's Lord, but even those children want to work for Vel.
And even with the Father's recommendation the prospective trainers could have unclear backgrounds.
So for now only take those who's identities are irrefutable to the Martial Families, hence only being the Gal's blood related siblings. Probably to protect the skills of the said families from being stolen.

Ahh! Re-reading I think I caught the problem, that being the [Legal Wife]'s children want to serve Vel, which means they might "aquire" their Father's recommendation and pose as someone else to be in Vel's land.By legal wives they're referring to the official wife of the fathers.
i.e. In Vel's case Elise would be the legal wife, while Ina, Louise, etc are concubines.
