Jingisukan is how the Japanese write Genghis Khan. Some guy in Hokkaido grilled some mutton in a particular way (with veggies like bean sprouts and with a savory sauce), inspired by the cooking of NE Asia, and called it that. It's still associated with Hokkaido but you can find it in a lot of places like Tokyo... or Tono!
