Also not "ice in beer", just ice to keep beer cool. Lager (bottom fermenting) beers need to be kept at around 10°C during fermentation, usually 7-12°C is optimal, while ales (top fermenting) are usually fermented between 16-24°C.
And Germans are primarily famous for their lager style beers, with the exception of weissbier, which is top fermenting. So yeah, ice is very helpful for beer making of you want lager.
