Think about it. What is the primary demographic of MTG players? What would they pay for the most?

nah the problem is that most of the mtg players who spend time at a store don't have money.

Most MTG players can be persuaded to spend money, failing LGS owners are just terrible at their jobs (extenuating external circumstances like the pandemic excepted, of course).

Additional draws for players to stay in store longer are always a good thing, so the (optionally maid) cafe idea is actually not bad, assuming it would be profitable on its own.
