...wow, Yayul is THAT kind of person?

Or well, that kind of kid. If he could just tell her that he would still choose to defend her, regardless of whether she could do so herself or not, because she's that important to him, she MIGHT get a better idea.

But making his master refuse to let her get stronger so he can defend her, AND training so he doesn't make her sad when trying to defend her, really feels a bit much, even if being a kid kinda makes it less egregious than if he was a fully grown adult.

I think he realizes that in order to continue to be with Yeon he has to take advantage of every opportunity given to get stronger. He was probably sensing that Yeon would not want to take care of him forever, but when Yeon reassured him and said these situations could be avoided if SHE just got stronger, it made him realise apart from his demonic arts, he was a weakling. That gave him the determination to register as the old guys disciple. Both of them are selfish, but Yeon bridged the gap first and Yayul recongnized this compromise and responded accordingly.

No, I get that. Again, it is more the "make myself the only choice she has to defend herself" that I take issue with.

Ah I doubt that's his mindset going in but I could be wrong. For me it was "the person I treasure would go all out to save me, I gotta make sure I'm not a liability for her" instead.
