I'm pretty curious about the story about the rebellion and why the second queen needs the ring.
Well, the ring determines sovereignty so whoever has it can at any time come forward and demand the throne as it is their birthright because they have the ring.

As long as the princess has it the second queen cannot really put her kids on the throne because the princess could at any point cause a succesion crisis with it. And while the second queen has this palace under her thumb any nobles dissatisfied with her would immediately starting backing the princess if only to threaten a crisis with which they could weasel a lot of power out of her.

Because yeah the queen is going to put her kid on the throne but as long as she doesn't have the king's ring she's in a position where actually doing so threatens to make her pay such a big price that her kid ends up being a puppet king in the end.

And that's just not worth it. So she needs the ring

Except it states that no one except for the dead King and Prime Minister knew what the ring looked like(It is fair to assume that the Princess also does by the fact of possessing it), so why not just claim any ol' ring was the sovereign one?

It's stated by Penny but Penny is an unreliable narrator as she's just assuming based off of what information they have. There is a possibility that there might be some nobility who are hiding the fact that they also know what the true ring looks like. Therefor the Queen doesn't want to risk her children's legitimacy to the crown.

We also don't really know the scope of the rebel forces but if it includes the people as well as the nobility and the people learn that the Queen is using underhanded tactics to get her children on the throne than that could lead to doubts about her desire for the throne. The last thing the Queen needs is for not only the nobility but the people themselves going against her because she may be the Queen but she's just one person and if the nobles who fought with her get cold feet, they could turn on her, too.

It's a complicated mess that she has to navigate through carefully.
