This may not be the place for this, but buckle up because I'm saying it anyway... It's weird how Earth technology always seems to function normally in fantasy isekais.

Like, these worlds operate on fundamentally different principles. Things that would be literally impossible on Earth are commonplace in the Other World. So why should the reverse not also be true?

What if the Other World never discovered gunpowder or electricity, not because everyone there only ever innovates with magic, but because things like chemistry and physics have different underlying properties that make Earth technologies impossible in that world?

Wouldn't it be more interesting if sometimes the MC tried to introduce stuff from Earth and it just didn't work? Like crop rotation isn't effective the soil chemistry and plant biology is fundamentally dependent on magic. Or they try to invent a gun only to discover that explosions don't propel things in this world because energy can only transferred through magic?

Highly unlikely for chemistry or something that fundamental to be different. If the reincarnated person did not explode you can assume most chemistry and science related things are similar, one thing that most likely would be different is the biology of plants and animals, but that does not change the fact the reincarnated person could figure out calsium nirtrate fertilizer and get the yields up.
These stories sadly do not focus on other stuff that could be different like the whether systems, different gravity or anything interesting. Because that would require being smarter than they are and would make it too cool

I seem to recall that the basic principles behind batteries are surprisingly old. They've found large and ancient egyption jars that were actually a primitive form of a battery... I no idea what they used them for though.
I'm sure that if these people were simply given the idea of mixing chemicals or using magnets (or whatever) to create a power source for such tech, they would eventually work it out.

One could argue that if you can create fireballs out of thin air with no fuel and no ignition source, then then regular Earth chemistry is already out the window.

I do agree with the last a bit though, so many isekai manga and so few try to do anything new or interesting with the setting

There are several reasons.

The quick reason is that the otherworlders and relics could instantly explode or dissolve if physics was sufficiently different. You can't expect all of them to be harmlessly inert.

Same deal with microbiology/fermentation, just more gross and painful.

From the other direction, there are some things that are axiomatic. Like math. Changing the way math works is harder than language for even less practical purpose in a story.

And when math is the same, a lot of things are just a matter of tweaking numbers in a recipe, which a lot of isekai reverse engineers do.

That being said, there's a rare few titles that do something along the lines you're talking about. But the main one I recall is not that guns didn't work, but that everyone is just beefier and tougher to tank small caliber rounds, and magic guns can already fire big booms at high range. Firing rate is something magic guns couldn't achieve though.

If there are other reincarnators as the guild leader insinuates, why isn't 'Earth' knowledge more widespread?
Perhaps there are limitations, like they can only summon one earthling every 10 years or so. In others mangas, they use limitations like that so they don't disrupt the stability of the new world.

Mild spoiler for The Magus of Genesis, since I've read that in the WN, but that's what roughly happens when the MC tries to "create" water wheels and is stumped because the water itself simply refuses to rotate the damn thing. I don't know if there are other occurrences for this kind of events, since I have lost the tab to the translator's site a few years back and just found the title again recently, but it was fairly interesting to read.
