@OmegaDragon its because she is from modern world (isekai'ed), where an independent women is natural (thats why she is smitten, as I said before, different perspective) , and when she first open no one know that she is a marquis daughter, because like you said its not common for a noble woman to open up a cafe, albeit serve others herself.
If you notice, nobles start to flood her cafe after the rumor (with the prince) started (except the queen, after she learn the cafe from Marquis wife, she always send a carriage every morning to buy a bread). Before that this cafe is just full of commoners and just one or two nobles like this couple for example.
