I can give some opinion regarding Tom yum, since it's my local cuisine.
The Tom Yum that shown here may not be the regular Tom Yum soup. But more like the tom yum noodle version, per the credit photo.
The different with the noodle version is that they add more condiments in the noodle dish to make it taste more like Tom Yum. But not all Tom Yum ingredients and herbs are used. They usually add sugar, crush roasted peanut, lime juice, chili paste and/or chili powder and fish sauce.
