If anything it makes sense that Ludwig the elder would have the God's tongue. It may seem kinda cheap that so many people in this story have it but honestly Patricia having it is the true anomaly. Shinobu and Ludwig are both from traditional long standing inns/restaurants, but Patricia I don't think has that kind of backing. I'd have to double check what her backstory is but I don't think it was anything like that.
She did say she's always been working at events like weddings where she'd get to try all sorts of food, so I'd say that's pretty plausible. She's also working at a high class inn where even if the staff don't eat the same dishes as the customers, they do get the same ingredients for meals.
If she was always talking to the chefs (she switches gears from 'respectful to chef' to 'chatting to coworker' pretty quick once the conversation turns to food) she'd pick up a ton of knowledge about ingredients, spices, etc. and she seems like the type who's eager to learn new things.
I think that's kinda where Lud is losing his touch, he's mostly been in the same kitchen working under his dad, making mostly the same dishes. He needs to get out and make some chef friends!! I love the bit where the whole crew and customers are sharing their knowledge and talking about how to improve the dish, that's the best part of working in a place where everyone loves food!
