I forgot where I heard this from and it's certainly not traditional, but if you are really short in time and want some good fried rice from freshly-cooked rice, put the freshly-cooked rice on a tray and have a fan blow over it to cool it down and dry it up. Mix it up periodically for even cooling and drying. Shouldn't take very long if you're starting from piping hot rice.

Once it's sufficiently cool and dry, you can proceed with it as if it's day-old rice.

Yea! Freshly cooked rice has a lot of moisture which makes a more mushy texture. Fried rice is better with more firm texture so good to remove the excess moisture. I spread my rice over a baking sheet and throw it in the fridge to evaporate the moisture quickly. Good to go after half an hour or so.

Dammit.

I can't even call bullshit; when I got out of the army, I just gobbled food as fast as I could, and my gramma took me to a ryokan/izekaya (it was kinda both) on the Oregon Coast.

After I ate about 4 times as much as one person, I also learned to slow down and taste again.

I mistakenly thought it was a reference to Egil the Viking. An article in Scientific American in 1995 described this legendary and historical figure who was born with a genetic disease that made his bones grow to great density and thickness. His skull was so hard and thick that an axe bounced off of it.

An Icelandic saga tells of a Viking who had unusual, menacing features, including a skull that could resist blows from an ax. He probably suffered from an ailment called Paget's disease

Nobu's does have a surprisingly high-class clientele, including an Imperial Princess (I think). I will have to review earlier chapters to revisit the story arc involving the marriage. The two countries' involvement got this close to revealing the existence of Izakaya Gen to Nobu's staff!

Egon will someday encounter one of the "Story Collectors" or other international spies who also misinterpret Nobu's significance when they eat there. The first one was totally intimidated by this hole-in-the-wall joint that had clear glass beer mugs and used ground black pepper with abandon, showcasing the might and influence of the ancient Empire.
