Never tried wedged fried potatoes with skin on... Is it any different in taste compare to stick shape fried potatoes?...
I actually never tried cooking wedged fried potatoes with the skin peeled. It doesn't taste any different, although the skin does give it a slightly different texture.

...in the first place, keeping the skin on makes the potato far more nutritious. Just make sure to scrub the potatoes with water and clean it of all dirt/pesticides thoroughly before frying and you'll be fine.

In chapter ones, Hans is tired of potatoes and mentions hes tired of eating them boiled. It's probably safe to assume they're probably primarily boiling potatoes, fire roasting and using them in stews.

Vegetable oils, lard and drippings are expensive for the average household. Butter would be the average fat used for this pseudo time period but you would use that sparingly.

Also in a lot of Medieval European societies, they didn't have baking ovens in the home. Either they used a communal village oven or brought bread. After all, wood is expensive so you would be sparing of it. You only really see individual households have baked dishes when equipment that can seperate the dish from the fire becomes more common place.

The big thing is leaving the skin on, you can definitely taste it, the skin has a stronger taste - and I like that taste! Otherwise the thing with wedges is that the outside bits of potato that touch the oil lose flavor, so with the wedge there's more untouched fluffy potato in the middle and you taste it a bit more.

Two things that the Nobu people should tell them, but I guess they're obeying the First Directive more than Capt. Kirk ever did: 1) even fried potatoes get boring real fast without some sort of acidic dipping sauce, and Nobu has plenty of options. 2) after cutting, you really should let them soak overnight in water, preferably chilled. Makes them so much better. In'n'Out burger does not, they just cut them up and fry them on the spot, which is why their fries are so limp and soggy and boring unless you ask for double fried (and even that just makes them less meh) or animal style.

not really, but i like to do wedges in the oven, coated in oil so the outside fries, and the skin gets crispier but also means it doesn't fall apart. try it with red or yellow potatoes

The way these people eat the fries up, the expensive cost of the fries (ie the oil) may just pay for itself and then some.
