Their personl shield is the 2 board on their shoulders called Sode. The Japanese use both hands to hold weapon, katana, spear, odachi etc. That's why nitoryuu or dual wielding was weird when Musashi developed it. Since they don't have free hand to hold shield they use Sode to block enemies arrow and attack.What is it with Japan and not using shields?
Afaik katana does actually snap more easily than European swords. This is due to poor metal quality. Regardless a good hit on the back or side with enough force from a solid hard stone might break a katanaCan't tell if that's within bow shot range or not.
Katanas usually wouldn't just break like that. They bend, due to the soft core. And the edge would chip.
Wood doesn't burn that easily. There's a reason it takes some skill lighting up a camp fire, especially without modern equipment. But since it seems it was planned, they did something about it.

I've seen some tough tests with swords. A katana would normally bend before it breaks, since the spine is soft. The edge would chip and break, though. A European sword would snap, but it takes more force to do so.
