On a commercial line, often prep cooks will disregard the hand guards because they slow them down under pressure. Instead they either wear ANSI-certified
cut resistant or chain mail gloves which you can order cheap on Amazon or they just don't try to be heroes and slice/great down to the end and toss the scrap into the refuse bowl early when they feel like they need to start slowing down for safety and grab a fresh ingredient.
I'm just glad this chapter only featured a grater and not a
Japanese mandoline, those thing will slice finger tips off as easily as they will carrots
