Bruh I guess because Sages are so focused on training and they're basically immortal, they tend to do stupid things for thousands of years before learning not to be stupid.
They probably use their medicines to mature. (And they unlock desires, including the desire to grow stronger or get revenge.)
Suiboku was a brat (and easily annoyed teen) for thousands of years. Meanwhile Fuukei was an annoying teen/young adult that held grudges for those same thousands of years.
"Teen" Suiboku destroying the place they lived in was probably at the level of a bad prank to powerful Sages. These guys cause storms and casually throw massive boulders, they can survive an exploding mountain.
Though Fuukei seemed more emotional compared to the 2 other sages so far, so he could be more attached and could hold a grudges easier.
