Pretty sure that Tsuchinoko is Tsuchi no ko meaning Child(ren) of the Earth. So he's literally apologizing to the Dirt / Earth children.

A little weird, since isekai is full of eating dogs, dolphins, whales and Octopus and Japan eats sentient people like dolphins, whales, and Octopus (and formerly, dogs).
So, why he wouldn't eat a mole with a kami-spirit name is a bit odd; pretty sure that most folks who would eat a dog, octopus, or dolphin would eat a human, chimpanzee, or elephant, so... why the hang-up?
It's just a fuckin mole, not a person; your culture eats people without you caring, so what the hell's your problem, ya weirdo?

Anyway; I respect the culture for what it is, but this MC seems like he's trying not to offend an audience and that's a weird read.
