This manga reminds me of the story about the girl who runs a laundry. Its frustrating because I can't remember the name exactly; all that I can recall is "Leave it to Kimi." The stories and characters are different, but the atmosphere is the same, it seems to me. Thanks to _anq for bringing it to us, and I hope someone picks it up when he moves on.

If I had to guess, she's just tying her hair randomly in different ways because she needs to do it anyway for the work alone. She can't have her hair falling into watch mechanisms. Often her hair isn't tied at all, so I reckon it's indeed mainly for the work.
