By the way, taco rice is FUCKING DELICIOUS.

I make it in more of an American style myself with ground beef seasoned with taco seasoning, a little bit of salsa, taco sauce, shredded cheese blends and usually some sort of sauce to go with it as well like a taco or ranch like sauce as well (just a little bit). Don't usually use lettuce because I don't use enough of it to warrant keeping it and it usually goes bad, but it's a real simple dish to make and it tastes amazing.

Nice part is you can custom it to what you have or what you feel like eating. I've gotten tortilla chips and scooped up the taco rice, put it in burrito wraps, etc.

Now, again, you can customize that to your liking. You can add a shitload more cheese, have no lettuce, have more meat, less meat, more rice, less rice, dump a bunch of taco sauce or hot sauce on it. Whatever you want. Make it how you want. It's going to still taste great and be easy to fix at the end of the day.
