I'd go with classic for the aquarium. Lots to see and talk about to reduce the risk of awkward silence, usually have dark areas so you can hold hands if you're not out yet, cafe for a break, gift shop for mementos. A solid choice for a date.

I’ve never been on a roller coaster either but I’d prolly prefer a Ferris wheel/ feel like I’d drop/ lose an accessory or so (tho imagine someone in the front row puking and it landing on someone else xP)
