Maybe it's Mother and Momoko-san back when they were maiko? We did have a chapter recently about her reminiscing on the past so we might get more flashbacks about them.

I've heard people say that bones from older chickens or hens make for better stock, but have not heard anything about specifically using younger ones 🤷‍♂️

This might be a slight miss on my part, but it seemed entirely reasonable that the Japanese would describe it this way. Per How old are chickens used for meat? it's likely this is referring to broiler/fryer chickens. Possibly also 'game hens'. Neither seemed like great substitutes for this. Definitely the age of the chicken dictates what uses it's applied to. If someone who shops in Japan or knows more about the correct translation could weigh in, that'd be great. In the meantime, I'll ping the translator about it.

Will update to just 'chicken bones'. Confirmed with the translator it should have been 'broiler chicken bones'. Since the default chicken in the US and Japan is broilers, it seems like it would be best to go with just 'chicken bones'.

Oh man I wish I knew a proper butcher. You can also just roast a whole chicken and go from there, but its kind of a pain. A lovely chapter with a real sense of the little things to relieve these girls working hard on their craft.
