At least that's my guess. In some settings demon Lords are the enemies of the Gods and so her trying to find a way to kill the king of the Gods make sense.

or she actually a fallen gods and wanted Eugene raise above and become new god so he too, will be immortal so she can stay with him forever. she like his mana but he clearly a mortal and will grow old and dies someday.

You're wrong. She's best waifu that's all I can say. I don't even know why the artust is hyping something it isn't that big of a deal in the novel

Erinyes just is in love with MC. She only really wants him to do well. We learn shortly that he's her type, after all.

If you wanted something more:
Erinyes just kind of hated her job. She was in charge of training rookie angels, among other things; and served under the Wood Goddess Freyja. She looks up to the Sun Goddess, and pities the angels who work under the three goddesses of Fate. Further beyond that, Erinyes isn't really hated by the angels either. She was banished as punishment, not because she's particularly evil in any case. Definitely became a problem, but not cartoonishly evil, kill the gods sort of girl.

She just seems like she really likes him and that is all. That last scene seems pretty obvious… but who knows. Also, a demon lord partaking in white magic seems pretty angelic to me, seems like she is just a fallen angel too.

Lol, partaking on his white stuff, I realized after writing it what I had done.

This is a spinoff in the same world as Full Clearing Another World under a Goddess with Zero Believers/Zero no Megami-sama to Hajimeru Isekai Kouryaku, just focused on another part of the world and with a different Final Labyrinth/Last Dungeon as the final goal, so we know the gods
are, at worst, a bit obnoxious, rather than evil.
I've heard this mentioned before, but one thing I don't recall seeing is when this story takes place in relation. Does it take place before, after, or concurrent with Zero no Megami-sama?

It runs in parallel by necessity.
After all, in the main story, there were a couple of students missing from the main group that all reincarnated in the water country.
Makoto then meets Sasaki Aya the Lamia in Laberinthos, as we know from this story, Sumire the Ifrit was thrown into the Zenith tower and in the later part of Zero Believers, we learn that a third one is with the Ice Queen of the Arctic continent.
Basically, everyone who was not reincarnated into a human body was thrown to a different place but the time frame is still the same.
