It's a type of pancake, and those do exist in various forms all over the world.

Can't really compare ancient times with modern when it comes to development speed. And getting fluffy bread is a bit of a science that isn't immediately obvious to anyone who sees a piece of bread. Unlike what they're doing here.

Not only is Rei cultivating his Beast Magic/Sorcery he is also pushing that world's culinary level forward (can't have an isekai'ed japanese person just sit around and not bring Japanese cuisine in the other world).
Though I have to say, if I was isekai'ed I'd be a dumbass and not even contribute anything about food. I can't even remember the ingredients of the food I eat most of the time
