I'm looking for anime or manga that involves sports you don't usually see (stuff like ice hockey, synchronized swimming, etc).

It doesn't necessarily have to be a series, it could be just an episode or even just a scene. Thanks in advance.

There's a lot of hockey manga. There is that Dogsred from Golden Kamuy mangaka that is currently serialized.
(Not that I read it, tho)
Don't know about synchronized swimming

Other quite unusual sports manga that I've read are
Chihayafuru, ( I mean, it is considered a sport )
Nononono (there's also a short manga Ao no Rettou )
Cross Manage
and Asahinagu

I know there's an Ultimate Frisbee manga and a curling manga, but I've never read them.

Medalist (ice skating) has anime adaptation this season.
Ryuuou no Oshigoto (shogi, a sport like chess) had an anime season.
Harukana Receive (beach volley), the manga is completed but not the anime.
Dumberu ga Moteru (besides the gym part they practice some sports sometimes). One anime season.
Grand Blue (diving), we're having another anime season this year.

I'll probably edit the message later for more.

I don't think those really count as "uncommon"

Girls und Panzer
this one, tho
whether it's real or not, they did call it a sport (senshado was it?)
and there's also that esport tank game

so I guess I'll add Tai Ari Deshita and Hi Score Girl

Eyeshield 21 technically counts as handegg is not commonly portrayed

Tsubame Tip-Off is devoted to girl's basketball, which (in my admittedly limited perspective) is a less common theme, Blue Box notwithstanding.

I recall some recently completed* manga about a girl's shooting club using modern light guns, but the name completely escapes me. I think I only read the first chapter, so no guarantees about how "sporty" it is.
*I think completed publication but less sure about TL

Girls Chivalric Order: Girls and HEMA is really all you need to know

How about The Climber? It starts off as a sports manga though after the time skip (where the first writer left and the artist took over) it becomes a completely different work. Bouldering/climbing is pretty unusual isn't it
