What are some notable manga you've come across that, deserved or not, barely anyone seems to have read?

not sure it meets your condition of barely anyone seems, but this one is worth a read if you haven't seen it.

A beautiful oneshot, that actually uses the long-strip format in a meaningful way by doing panorama shots (havent seen that being a thing in any other manga/long-strip comic) and I think it is rather beautiful.

A mystery ghost stories manga by Furudate Haruichi, the mangaka doing Haikyuu. Discovered Haikyuu through this.
This manga will always be one of my faves up there with Haikyuu.

Annarasumanara
I don't think many people have heard of it or talk about it on mangadex. It's kinda hard to give a straight up coherent introduction to it, but it's really good and here's my attempt. I highly recommend it. It was a 10/10 for me.

Annarasumanara is a mid-length webtoon about a young high school girl who struggles trying to raise her sister because he father's toy company went bankrupt and her mother left. All she has left is her sister, her grades, and the constant hunger she has to put up with. However, one day she ends up wandering into an old circus where she meets a magician.
