Carbonated orange juice? I'm not really familiar with this kind of stuff, but is that mean the water used was special or is there a method to make things carbonated (especially around medieval time)?

@Grimmycoffee carbonation can be achieved by fermentation under pressure /yeast+sugar=bubbles, thats how dough rises, bubbles of co2 get trapped in gluten/. Thats how champagne was discovered. Theres also kombucha which is made by using a bacterial culture and fruits to achieve same effect.

There are also spring water that are just naturally carbonated.

Though I believe the europeans might be able to explain this better
