In this chapter you can see how Inuma and the president dip their sushi into soy sauce. There's information behind it and I like how it reinforces their characters.
The way the president flipped the sushi so that the soy sauce only touched the fish, is the traditional way to put soy sauce on your sushi. The reason being is that dipping the rice which the restaurant cook would imply that their rice doesn’t taste good.
I think the fish gets a pass because it’s raw fish- but rice being the simple staple. There’s credit when it’s cooked right.
Mind you, considering how the president eats at fancier establishments- he’s probably eaten in front of the sushi chef where this is more etiquette.
