From what I saw, the protag will take some flag from heroine that have a sad backstory in front of him, making him accumulate girls, but he is quite clear he is in a romantic relationship with only his fiancé from the start.
That could explain the confusion.
The others girls respect the fact that he is in a committed relationship and only seek friendship from the both of them.

This isnt a possession. This is him remembering his past life late and his outlook and personality being affected by that. I can understand why you are confused since he keeps referring to his past in third person as if that wasnt him.

so the dumb maid (and she's dumb because she was acting that way to a prince, her superior) didn't want to serve the mc because she liked the another prince, but when she's being replaced she's unhappy? Also poorly serving one royal family member would lower her chances of serving another, because she appears incompetent, and that's exactly what happens. So she's a very dumb maid, letting her feelings ruin her future.

Well they've only met for the first time years ago, and she fell in love with him at first sight after his act of kindness. She didn't know anything about him until his name and status after that meeting, I imagine, and maybe whatever reputation he has gained.

Despite that, this girl and the MC that's now taking over the villainous prince's body are more similar than either of them realize (having severe lack of social skills and friends), and you can only get so much about a person from 'rumors' until you meet them yourself. Being a princess, herself, I guess she only took those rumors of the prince as such and didn't let them deter her view of him until their second meeting when their engagement was set.
