This is another type of dessert that has fallen out of favor - I can remember Mom making these a couple of times in the '80's, but you don't see them much today, at least in the US.

The most common (?) variety is the pineapple upside-down cake, where pineapple rings are placed at the bottom of the cake pan, and the batter is poured in over the top of them. Once the cake has baked, it's removed by flipping the pan, putting the pineapple on top, and usually maraschino cherries and a glaze are added. (Should not be confused with a pineapple upside-down pie, which is what you end up with if you put me within reach of a pineapple pizza. I will flip that shit directly onto the floor where it belongs.)

There are other varieties; almost all are some kind of fruit. Pear, strawberry, and orange are pictured.

Under a week! VOTE!

There are no desserts I could find that start with X. Not even ones I've never heard of before. There's probably a brand of something out there, but instead of spending a tremendous amount of time searching, I'm going with a sugar substitute.

The end of the alphabet is hard.

I've got something for Z, but nothing I'm finding for Y is anything I'm familiar with. If anyone else has one, please chime in.

(Otherwise, I have to do something weak, like 'Y is for Yes, I'll Have Dessert' or 'Y is for Yes, @Mr_D is going to bonk the ever-loving shit out of my dumb dessert posts on this thread'. And the latter will be the fault of all of you who read this and didn't bother to GO VOTE IN THE BRACKETS.)

Polls start closing on the individual brackets in FIVE DAYS, so get those votes in!

POLLS CLOSE IN THREE DAYS

These are fried dough (yay!), and can range from similar to to funnel cakes to more like donuts to something churro adjacent. It really depends on who's preparing them.

Some have fillings; some are more intricate; some are savory rather than sweet. All of them look delightful.
