To be fair, the demons in Frieren very much comprehends human empathy and morals, they just dont feel or care for any of them. They instead use them to manipulate humans to predate on them.

From what I recall, the demons know that they do not feel empathy, and many other human emotions, and don't really care, but don't fully understand it either. Macht ended up getting interested in humans and their emotions, hence him choosing to interact with humans to learn more about them, choosing to serve Gluck and ultimately "destroy" Weise.

Even in their fleeting nature, our encounter and the shared moments remain etched in my mind. And so, I’ve made a choice—to erase it all. Perhaps in this act of deliberate oblivion, I’ll grasp the essence of “malice” and taste the bitter flavor of “guilt.”
