I like the story, but all the "music talk", especially in this chapter, is writen by someone that doesn't know what they're talking about, only buzz words and blurbs from KPop PR teams.

I'd like to know what irl songs, if any, they had in mind when describing the one in the story, so I could hear what they mean by "heavy and gloomy blues" played with only a violin, that turns into "upbeat hip hop" with guitar and drum (but no bass?!), then another "genre" and mood, all the while keeping the same melody.

I feel the same way. This reminds me a lot of Skool of Street. An interesting story but the author doesn't really portray or even know the core of the setting (dancing in Skool, singing in this) all that well.

Do you think it’s because of copyright laws? There are certainly ways around it like playing with certain names or titles to convey to the reader, but I wonder if it’s a legal fear.

Also, mc was a failing singer. the fact that he’s become a prodigy at composition is super weird to me

As a musician, it actually piques my curiosity. I have no idea what they meant either considering the vast amount of creativity and possibilities, but the closest I can think of were back to my days in concert/orchestra type of bands and it's uncommon to hear compositions that changes its vibe. I haven't focused on any lyrical type of music but well it's possible. A melody can be kept the same in different genres.
