You're misunderstanding. They're calling this manga's Torako "AU Torako" because it's AU to the original Torako that we knew from the other manga. So no you're not wrong but you're also making a bit of an ass of yourself.

In what world would the character that is canon to the story be AU? By this assbackwards logic that would mean literally every character in the story is AU since they are in an alternate universe to that of the characters of Torako's manga.
