I doubt it's that simple, because it wouldn't explain why Mitsuki's dad doesn't just kill himself. like maybe their bakeneko powers means they would automatically resurrect from normal supposedly fatal injuries, but if they use up a lot of their bakeneko power (like turning other cats like tiggy into bakeneko) they won't resurrect

I think the father tries to transfer the whole bakeneko thing, curse, power and immortality to somebody else. Then they are just a cat again and can live and die normally.

Notice owner only mentioned her and her father when saying Mi's dad was all they had left meaning it's likely their mom, the original female bakaneko, is also dead. I'd put money on them having been killed/exorcised by humans.
