He was already pretty well dead.

It looks like she was in the final stage like her Granny was, and the infection went out of control. So the "cherry tree" burst out of her looking for nutrients, and had weakened already severely infected guy right there.

It’s an interlude. It basically shows us that the main characters are not in fact the main characters: that weird shit and the end of the world continue apace and sometimes there isn’t anyone to investigate or save the day. And in the end, it’s foreshadowing Inubousaki’s fate. That no one was able to save her from the spirits and supernatural either.
