Couple of notes regarding the recipe.

The meat that she's using is most likely pork belly, instead of pork ribs, at least in English. I think the cuts are just named differently in Japan. "alcohol" is sake. Sake + mirin + soy sauce is an extremely common flavor profile in Japanese cooking.

As for the mysterious sauce, beats me. Could be anything, really. I'd eat it as is, there's plenty of flavor already in stuff already in the pan.

I agree that pork rib seemed a little... odd; I was also pretty worried about whether or not 酒 should be "alcohol" or sake specifically...
I'm glad to have someone else keeping an eye out for these things! I don't do a lot of cooking myself, so there were a few things I was unsure of, like the distinction between frying/grilling/broiling (Nekotoufu used 焼く, which could mean any of those things), that I had to go look in to first. I didn't know about the Sake/Mirin/Soy combo though.

Obviously it's not the same dish but it's very similar and might be a good starting point perhaps?

Maybe the mangaka is using some sort of variation of this dish
